Ingredients
Scale
Main Ingredients
- 2.5 cups cauliflower rice (fresh or frozen, thawed)
- 2/3 cup shredded cheddar cheese
- 1/4 cup almond flour
- 2 large eggs, unbeaten
- 1 scallion, thinly sliced
- 1/2 teaspoon table salt
- 1/4 teaspoon ground black pepper
For Cooking
- 2 tablespoons butter
Instructions
- Combine Ingredients: In a large bowl, mix the cauliflower rice, shredded cheddar cheese, almond flour, unbeaten eggs, sliced scallion, table salt, and ground black pepper thoroughly until well combined and uniform.
- Heat Butter: Place a large skillet over medium heat and melt the butter until it’s hot and bubbling, preparing for frying the fritters.
- Form Fritters: Using about 1/4 cup of the mixture per fritter, carefully scoop and drop the batter into the skillet, then flatten each slightly with a spatula to form patties.
- Cook Fritters: Fry each fritter for 3 to 4 minutes on each side until they develop a golden brown crust and are cooked through. Make sure not to overcrowd the pan to ensure even cooking.
- Drain Excess Oil: Once cooked, transfer the fritters to a plate lined with paper towels to remove any excess butter or oil for a lighter final product.
- Serve Warm: Enjoy the fritters hot as a tasty side dish or a satisfying snack, perfect on their own or with your favorite dip.
Notes
- Use fresh cauliflower rice for the best texture, but thawed frozen cauliflower rice works well too.
- Be sure to flatten the fritters slightly for even cooking and a crisp exterior.
- If you like a spicier flavor, add a pinch of cayenne pepper or smoked paprika to the mixture.
- These fritters can be stored in the refrigerator for up to 3 days and reheated on a skillet to maintain crispiness.
- Substitute almond flour with coconut flour if preferred, but adjust the quantity as coconut flour absorbs more moisture.
