Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking.
- Mix Dry Ingredients: In a large bowl, combine rolled oats, whole wheat flour, salt, baking powder, and cinnamon, stirring well to evenly distribute all the dry components.
- Prepare Wet Ingredients: In a separate bowl, whisk together the egg, maple syrup (or honey), unsweetened applesauce, milk, vanilla extract, and melted coconut oil or butter until smooth and combined.
- Combine Mixtures: Pour the wet ingredient mixture into the bowl with dry ingredients and stir gently until just combined, being careful not to overmix to keep the batter light.
- Add Blueberries: Fold in the fresh or frozen blueberries carefully to avoid breaking them and to maintain the batter’s texture.
