Instructions

  1. Preheat the Oven: Preheat your oven to 450°F (232°C) to ensure it’s hot and ready for baking the tacos to achieve crispiness.
  2. Prepare the Ground Beef: Heat a skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spatula, until fully browned. Stir in the taco seasoning and red enchilada sauce, allowing it to simmer briefly before removing from heat to meld the flavors.
  3. Warm the Tortillas: Stack the corn tortillas and wrap them in a damp paper towel. Microwave for 30 to 60 seconds until soft and pliable to prevent cracking when folded.
  4. Assemble the Tacos: Lightly brush one side of each tortilla with olive oil and place them oiled side down on a baking sheet. Add 2 tablespoons of shredded cheese on half of each tortilla, top with approximately 1/4 cup of the seasoned beef, then sprinkle with 2 more tablespoons of cheese. Fold the tortilla over the filling to form a taco shape.
  5. Arrange and Bake: Place the assembled tacos in a single layer on the baking sheet. Bake in the preheated oven for 16 minutes or until the tortillas are crispy and the cheese is melted perfectly.
