- Mix Egg Base: In a large mixing bowl, whisk together the eggs, milk, salt, pepper, and dried oregano until the mixture is well combined and slightly frothy.
- Combine Ingredients: Gently fold the sautéed mushroom mixture, crumbled feta cheese, grated Parmesan (if using), and chopped parsley or spinach (if using) into the egg mixture, ensuring even distribution.
