Instructions

  3. Cook Mushrooms and Garlic: Add the sliced mushrooms to the skillet and cook for 5 to 7 minutes until they soften and most of their moisture evaporates. Stir in the minced garlic and cook for an additional 1 minute to enhance the flavor. Remove from heat and set aside to cool slightly.
  4. Mix Egg Base: In a large mixing bowl, whisk together the eggs, milk, salt, pepper, and dried oregano until the mixture is well combined and slightly frothy.
  5. Combine Ingredients: Gently fold the sautéed mushroom mixture, crumbled feta cheese, grated Parmesan (if using), and chopped parsley or spinach (if using) into the egg mixture, ensuring even distribution.
  6. Transfer to Baking Dish: Pour the combined mixture into the prepared baking dish and smooth the top with a spatula for an even bake.
