Ingredients
Scale
Crust
- 2 cups graham cracker crumbs
- ½ cup unsalted butter, melted
Filling
- 2 cups powdered sugar
- 1 cup unsalted butter, softened
- 2 large eggs (or ½ cup pasteurized egg substitute)
Fruit Layers
- 4 ripe bananas, sliced
- 1 (20-ounce) can crushed pineapple, drained
- 2 cups sliced fresh strawberries
Toppings
- 2 cups whipped topping or freshly whipped cream
- 1 cup chopped pecans
- ½ cup chocolate syrup
- ½ cup maraschino cherries, drained and halved
Instructions
- Prepare Crust: In a medium bowl, combine the graham cracker crumbs and melted butter, mixing until the crumbs are evenly moistened. Press this mixture firmly into the bottom of a 9×13-inch dish to form an even crust.
- Make Filling: In a large bowl, beat together the softened butter, powdered sugar, and eggs until the mixture becomes light and creamy, which should take about 3 minutes.
- Assemble Layers: Spread the creamy filling evenly over the prepared crust. Next, arrange the banana slices in a single layer on top of the filling. Follow with an even layer of drained crushed pineapple and then the sliced fresh strawberries.
- Add Toppings: Spread the whipped topping over the fruit layers to cover completely. Sprinkle the chopped pecans evenly over the top. Drizzle with chocolate syrup and garnish with halved maraschino cherries.
- Chill the Cake: Cover the dish and refrigerate the cake for at least 4 hours or overnight. This chilling time allows the flavors to meld together and the cake to set properly before serving.
Notes
- For a no-egg version of the filling, blend an 8-ounce block of cream cheese with powdered sugar and a splash of milk to replace the butter, powdered sugar, and eggs layer.
- You can customize the cake by adding crushed cookies between layers or drizzling caramel sauce over the top for extra flavor.
- Keep the cake refrigerated until ready to serve to maintain freshness and texture.
