Marinade & Glaze
- 3 tablespoons low-sodium soy sauce
- 6 tablespoons honey or maple syrup
- 1 teaspoon lime zest (from one lime)
- 3 tablespoons fresh lime juice (from 1 1/2 to 2 limes)
- 4 garlic cloves, minced or grated (or 1/2 teaspoon garlic powder)
- 1 1/2 tablespoons grated fresh ginger
- 1 tablespoon vegetable oil
- 1 1/2 tablespoons Sriracha sauce
- 1 1/4 teaspoons kosher salt
- 1/2 teaspoon cornstarch (optional, for thickening the glaze)

- 2 tablespoons chopped cilantro or parsley
- Lime wedges for serving
Instructions
- Make Marinade/Sauce: In a bowl, whisk or blend together soy sauce, honey or maple syrup, lime zest, lime juice, minced garlic, grated ginger, vegetable oil, Sriracha sauce, and kosher salt until well combined.
- Marinate Chicken: Place the chicken pieces in a bowl or resealable bag and pour half of the marinade over them. Toss to coat evenly. Marinate for 30 minutes at room temperature or refrigerate for 6 to 12 hours for deeper flavor.
- Prepare Glaze (Optional): Reserve the other half of the marinade. If desired, mix the cornstarch into the reserved marinade and heat gently in a small saucepan until thickened to create a glaze.
- Prepare Grill: Preheat your grill to medium-high heat. Oil the grill grates lightly to prevent sticking.
- Skewer Chicken: Thread the marinated chicken pieces onto skewers, leaving a little space between pieces for even cooking.
- Grill Chicken Skewers: Place skewers on the hot grill. Cook until the chicken is golden brown and cooked through, approximately 10-12 minutes, turning occasionally and basting with the glaze during the last few minutes of grilling.
- Serve: Remove skewers from the grill. Drizzle with any remaining sauce, sprinkle with chopped cilantro or parsley, and serve with lime wedges on the side for squeezing over.
