Marinade & Glaze

  • 3 tablespoons low-sodium soy sauce
  • 6 tablespoons honey or maple syrup
  • 1 teaspoon lime zest (from one lime)
  • 3 tablespoons fresh lime juice (from 1 1/2 to 2 limes)
  • 4 garlic cloves, minced or grated (or 1/2 teaspoon garlic powder)
  • 1 1/2 tablespoons grated fresh ginger
  • 1 tablespoon vegetable oil
  • 1 1/2 tablespoons Sriracha sauce
  • 1 1/4 teaspoons kosher salt
  • 1/2 teaspoon cornstarch (optional, for thickening the glaze)

Garnish

  • 2 tablespoons chopped cilantro or parsley
  • Lime wedges for serving


Instructions

  1. Make Marinade/Sauce: In a bowl, whisk or blend together soy sauce, honey or maple syrup, lime zest, lime juice, minced garlic, grated ginger, vegetable oil, Sriracha sauce, and kosher salt until well combined.
  2. Marinate Chicken: Place the chicken pieces in a bowl or resealable bag and pour half of the marinade over them. Toss to coat evenly. Marinate for 30 minutes at room temperature or refrigerate for 6 to 12 hours for deeper flavor.
  3. Prepare Glaze (Optional): Reserve the other half of the marinade. If desired, mix the cornstarch into the reserved marinade and heat gently in a small saucepan until thickened to create a glaze.
  4. Prepare Grill: Preheat your grill to medium-high heat. Oil the grill grates lightly to prevent sticking.
  5. Skewer Chicken: Thread the marinated chicken pieces onto skewers, leaving a little space between pieces for even cooking.
  6. Grill Chicken Skewers: Place skewers on the hot grill. Cook until the chicken is golden brown and cooked through, approximately 10-12 minutes, turning occasionally and basting with the glaze during the last few minutes of grilling.
